Soft Apple Cookies (Biscuits)

Soft apple cookies are the perfect back-to-school bake. Tender, soft cookies are flavored with applesauce and dehydrated apples. A touch of warm sugar and cinnamon make these cookies a delicious autumn treat. Warm cinnamon glaze is drizzled over the top of the cookies to tie the flavors all together.

Ingredients
  

Soft Apple Cookie Dough:
  • 1 cup Salted Butter *Softened
  • ½ cup Cane Sugar
  • ½ cup Light Brown Sugar *Packed
  • ¼ cup Applesauce *I prefer unsweetened applesauce but sweetened can also be used.
  • 2 Large eggs
  • 1 tsp Vanilla
  • cups AP Flour
  • 1/4 cup Dehydrated Apple (Powdered in food processor/blender) Approximately 3/4 cup before being powdered.
  • ½ tsp Baking Soda
  • ¼ tsp Cinnamon
Golden Syrup Cookie Glaze:
  • cups Powdered Sugar
  • 4 Tbsp Golden Syrup
  • 1 tsp Vanilla
  • 5 Tbsp Heavy Whipping Cream
  • 2 Tbsp Salted Butter *Melted
  • ½ tsp Cinnamon

Method
 

  1. In a large mixing bowl, cream both sugars and the softened butter until light and airy (approximately 1 minute).
  2. Add eggs, applesauce, and vanilla. Mix until smooth (scraping the sides down in between).
  3. Stir the dry ingredients in a separate medium sized mixing bowl.
  4. Pulverize the dehydrated apples in a food processor. Then add the ¼ cup apple powder to the cookie batter. Mix until all ingredients are just combined.
  5. Wrap the dough in plastic wrap and place in the refrigerator to chill. Overnight is best if you have the time- otherwise 2- 3 hours will suffice.
  6. Line baking sheet(s) with parchment paper.
  7. Once the dough is chilled, remove from the refrigerator. Lightly flour work surface. Roll the dough to ¼ inch thickness. Cut desired shapes out of the dough with metal cookie cutters.
  8. Place cut shapes on lined baking sheet (an inch apart) and place back in the refrigerator for 20 minutes. (Note: this helps the cookies to keep their shape when they go into the oven.)
  9. Preheat the oven to 350 ℉.
  10. Bake the cookies for 8-10 minutes-or until the edges are golden and firm. The tops will be firm but have soft centers.
  11. Allow the cookies to properly cool before adding a golden syrup glaze to the tops of the cookies.
Golden Syrup Cookie Glaze:
  1. Sift powdered sugar into a medium sized mixing bowl.
  2. Using a small microwave safe bowl, melt the butter in the microwave.
  3. Add the melted butter, golden syrup, vanilla, cinnamon, and cream. Stir until well combined.
  4. Drizzle the glaze over the cooled cookies and enjoy!
