Royal Icing for Christmas Spice Cake

Royal icing is made with egg whites, lemon juice, and powdered sugar. Once prepared the icing is a pure white color and dries slightly hard. This recipe is perfect for cakes and cookies alike.

Ingredients
  

  • 2 large Egg Whites
  • 4 to 4 1/2 cups Powdered Sugar Sifted
  • 1 Lemon Juiced

Method
 

  1. Separate the egg white from the egg yolks. Whisk the egg white with a fork for about 15 seconds (until it begins to create small bubbles on the surface).
  2. To the egg whites, add 2 cups of the sifted powdered sugar and the lemon juice. Stir with a spoon for approximately ten minutes or until the icing is very white and smooth. Add the rest of the powdered sugar until all the sugar has disappeared.
  3. Use immediately or cover and refrigerate.

Notes

*The lemon juice helps to give the royal icing a slight lemony taste (which is lovely)- however, if lemon does not compliment your recipe, you can omit the lemon and add a bit of water.
