Method
- Separate the egg white from the egg yolks. Whisk the egg white with a fork for about 15 seconds (until it begins to create small bubbles on the surface).
- To the egg whites, add 2 cups of the sifted powdered sugar and the lemon juice. Stir with a spoon for approximately ten minutes or until the icing is very white and smooth. Add the rest of the powdered sugar until all the sugar has disappeared.
- Use immediately or cover and refrigerate.
Notes
*The lemon juice helps to give the royal icing a slight lemony taste (which is lovely)- however, if lemon does not compliment your recipe, you can omit the lemon and add a bit of water.
