Cranberry Spice Cake

A homemade yellow cake batter with added mulling spices and cranberries. This cake is lovely, moist, and full of the flavors of Christmas. The perfectly cozy and warm- winter cake.

Ingredients
  

  • 1 cup Salted Butter softened
  • 1 1/4 cups Granulated Sugar
  • 1 cup Light Brown Sugar packed
  • 1 TBSP Golden Syrup optional (see post on homemade golden syrup for recipe.)
  • 3 cups All-Purpose Flour spooned and leveled
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 cup Mulling spices (see homemade mulling spice recipe)
  • 8 oz Sour Cream
  • 1/2 cup Half and Half *Milk can be substituted
  • 2 1/2 Tbsp Vanilla
  • 1/2 cup Fresh Cranberries

Method
 

  1. Preheat oven to 350 degrees F. Grease and flour a bunt cake pan. Set aside.
  2. Cream softened butter until light and airy. Add granulated sugar and brown sugar until well combined.
  3. Add golden syrup to the creamed sugars. Then add eggs, sour cream, half and half, and vanilla.
  4. In a separate mixing bowl- add flour, baking powder, baking soda, and homemade mulling spice. Stir to combine all ingredients evenly. (Set aside one to two tablespoons of the flour mixture to coat the cranberries in).
  5. Slowly add the dry ingredients to the wet ingredients in the mixing bowl. Mix just until all ingredients are incorporated.
  6. Wash the cranberries and pat dry with paper towel. Sprinkle the cranberries with the flour that was set aside. Gently fold the cranberries into the batter.
  7. Pour batter into the prepared bunt pan and bake in preheated oven- until a toothpick comes out clean- and the top is golden brown. Ovens, baking pans, and times may vary.
  8. Allow the cake to cool completely before adding the royal icing (see Royal Icing Recipe).

Notes

*If you do not want to make homemade mulling spices, Publix sometimes carries pre-made mulling spices for purchase.
*Fresh cranberries are tart. Less cranberries can be added, or they can be removed from the recipe all together (to suit individual taste).
