Banana Bread Muffins with Cinnamon and Sugar Crumble

Banana Bread Muffins with Cinnamon and Brown Sugar Crumble are a delicious take on the classic Banana bread recipe.

Ingredients
  

  • 1 3/4 cups All Purpose Flour
  • 2/3 cup Granulated Sugar
  • 1 1/2 tsp Golden Syrup *Optional
  • 1/2 tsp Baking Soda
  • 2 tsp Baking Powder
  • 2 whole Bananas (Quite Ripe)
  • 1/3 cup Salted Butter melted
  • 2 Tbsp Heavy Whipping Cream
  • 2 large Eggs
  • 1 tsp Vanilla
  • 1/2 tsp Ground Cinnamon
Cinnamon and Brown Sugar Crumble
  • 1/2 cup Brown Sugar
  • 1/4 cup AP Flour
  • 3/4 tsp Ground Cinnamon
  • 2 Tbsp Salted Butter melted
  • Slight Drizzle of Golden Syrup (optional)

Method
 

  1. Preheat oven to 350 degrees F. Line a muffin pan with cupcake liners.
  2. In a large mixing bowl, add 1/3 cup of melted butter. Add sugar and golden syrup to the butter and stir.
  3. Add two ripe bananas (and mush down with a fork).
  4. Add the two eggs, cream, and vanilla. Stir until well combined.
  5. In a separate mixing bowl, (spoon and smooth your 1 3/4 cup flour). Adding the baking soda and the baking powder- stir together to combine.
  6. Add cinnamon to the dry ingredients and stir.
  7. Add the dry ingredients to the wet ingredients by gently folding the ingredients together.
  8. Spoon the banana bread muffin mix into the prepared muffin pan and set aside. *Fill each liner 3/4 of the way full (leaving room for the crumble topping).
Cinnamon and Brown Sugar Crumble
  1. Melt 2 Tablespoons of butter. Add brown sugar, cinnamon, and 1/4 cup flour to the butter. Gently mix until all the flour has disappeared.
  2. Evenly add the crumble mixture over the top of the muffins.
  3. Place muffins in the preheated oven and bake for approximately 16-18 minutes. Bake until golden brown and a toothpick comes out clean.
  4. Enjoy!

Notes

*If you have extra batter, a mini-loaf pan can be used to bake the reminder of the batter.
