Easy No-Bake Chocolate Covered Peanut Butter Cookies

If so, then this may be the ideal post for you. For today on the blog, my Happy Hawks Homeschool crew and I will be making our easy no-bake chocolate covered peanut butter cookies. With just a few simple ingredients, and no baking required, this recipe is so easy that even young children can make it.

What Are No-Bake Chocolate Covered Peanut Butter Cookies?

No-bake chocolate covered peanut butter cookies are basically peanut butter sandwich cookies coated in smooth milk chocolate. Naturally, a bit messy to create… but the end result is a delightful, kid- friendly snack food.

Actually, this recipe is a fun take on the more traditional chocolate dipped peanut butter Ritz crackers. However, in place of the Ritz crackers, we decided to use Goya Maria cookies. We buy our Goya Maria cookies from Aldi. These delicious cookies are inexpensive to purchase- and nice to have on hand- for small children.

In fact, they remind me of the famous Rich Tea biscuits (cookies) that my daughter and I used to enjoy eating- while living in England. If I was asked to describe a Goya Maria cookie, I would say that they are a crunchy Spanish-style cookie with a subtle, mild, slightly sweet flavor.

Actually, they have a similar taste to an American animal cracker. Perhaps even similar to a graham cracker.

Often the children and I use these Goya cookies to add peanut butter to as a mid-morning snack.

One day, as we were enjoying our snack, an idea occurred to me.  Why don’t we use these peanut butter sandwich cookies to create a similar recipe to the Ritz crackers edition? Same idea… with one minor ingredients swap: the Goya cookies for the Ritz crackers. 

And with that idea in mind, we were off to the kitchen to experiment.

What Ingredients Are Needed to Make No-Bake Chocolate Covered Peanut Butter Cookies?

The ingredient list for this simple recipe is indeed very short! Which is one of the many reasons these little treats are the perfect snack for children.  In order to make this recipe you will need the following ingredients:

 

  1. Goya Maria Cookies
  2. Creamy Peanut Butter
  3. Milk Chocolate Chips

Yes, you read that right- only three ingredients are needed to make these delightful cookies!

Easy No-Bake Chocolate Covered Peanut Butter Cookies

My easy no-bake chocolate covered peanut butter cookies are both delicious and easy to make. With just a few ingredients, a delightful after-school snack can be created. This recipe is so simple that even young children can make these on their own with little adult supervision.

Ingredients
  

  • 1 Package Goya Maria Cookies *7 oz package
  • 1/2 cup Smooth Peanut Butter *You can add as much- or as little- peanut butter as you prefer.
  • 1 Bag Milk Chocolate Chips *This is approximately 2 cups. Note: you can generally use any other chocolate you would like for this recipe.

Equipment

  • 1 Microwave-safe mixing bowl *Or a double boiler for melting the chocolate.

Method
 

  1. Line a baking sheet with parchment paper and set aside.
  2. Slowly melt the milk chocolate chips in the microwave. Stirring at thirty second intervals so as not to burn the chocolate. Set the melted chocolate aside.
  3. Open the package of Goya Maria cookies. Take one cookie and spread approximately 1 Tablespoon of peanut butter on it. (Note: I like my cookies to be full of peanut butter- so I can really taste the PB once it is coated in chocolate- but you can put as much peanut butter as you like).
  4. Then, place another Goya Maria cookie on the top of the peanut butter. Now you have created a peanut butter cookie sandwich.
  5. Dip the peanut butter cookie sandwich into the chocolate. You can either dip half of the cookie in the chocolate, drizzle the chocolate over the tops of the cookies, or completely cover and coat the sandwich cookie. This part is up to you and your personal taste/imagination.
  6. Place the chocolate covered cookies on the lined baking sheet. Allow the chocolate to harden. You may also place the cookies in the refrigerator to speed up this process.
  7. Once the chocolate is dry, the cookies are ready to be eaten. Note: If placing in the refrigerator to chill, I recommend taking them out a few minutes before serving- as slightly room temperature chocolate seems to taste better in my opinion.
  8. Enjoy with a glass of milk or a cup of hot English tea!

Notes

*If you like, you can also add a sprinkle of sea salt to the tops of the chocolate cookies before the chocolate is dry. This adds a salty element to complement the sweet chocolate and creamy peanut butter.

How to Make Chocolate Covered Peanut Butter Cookies (In Photo Format):

As I always say, a picture is worth a thousand words. Therefore, I will illustrate my recipe by sharing some “caught on camera” real life moments that took place with my children in our family kitchen. Won’t you follow along as we go?

*Once coated in chocolate, the cookies will need time to harden before eating. It is worth noting, that adding a sprinkle of coarse sea salt to the tops of the melted chocolate adds a lovely, salty contrast to the otherwise sweet cookie.

*Initially, this partially dipped cookie looked like a little "character." As we were making our cookies, our oldest son excitedly remarked, "Mom, that cookie looks like it has hair on the top!" After his keen observation, we all smiled in agreement and thus decided that we needed to make a rustic face for him. That is exactly what we did. Oh, and I almost forgot to mention... we gave him a name...a "dude named Jude!"

Frequently Asked Questions on No-Bake Chocolate Covered Peanut Butter Cookies:

1. What if I cannot find Maria Goya cookies, can I use anything else?

 Yes, there are many substitutions you could use. Ritz crackers (sounds strange I know- but they are delicious), graham crackers, animal crackers, Rich Tea biscuits (An English tea biscuit that can sometimes be found in the international section of Publix grocery store). Or, for a different taste, you could even use Oreo cookies. The possibilities are almost endless.

2. Can I use any type of peanut butter?

You can experiment with any type of peanut butter. However, I personally find smooth peanut better is the most suitable option for this recipe. Crunchy peanut butter tends to be harder to spread, and it makes the cookies break easier, but it does give a contrasting texture. On the other hand, natural peanut butters can be dry and harder to spread. Generally, any type of peanut butter can be used.

3. Can I use any type of chocolate?

Yes, you can experiment with any type of chocolate that you like. I prefer milk chocolate, but dark chocolate, semi-sweet chocolate, and even white chocolate are all delightful alternatives.

4. How do I store leftover cookies?

Store the leftover cookies in an airtight container or Ziplock bag and in a cool, dry place. These cookies will be soft on a hot and humid day. However, they can be stored in the refrigerator as well… and taken out a few minutes before serving.
